No-Bake Energy Bites

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup nut butter (almond, peanut, or cashew)
  • 1/4 cup honey or maple syrup (for sweetness)
  • 1/4 cup chia seeds or flaxseeds
  • 1/4 cup mini dark chocolate chips (optional, for a treat)
  • 1/4 cup dried fruit (raisins, cranberries, or apricots), chopped
  • 1/2 teaspoon vanilla extract
  • A pinch of sea salt

Instructions:

  1. Mix Ingredients:
    In a large bowl, combine the rolled oats, nut butter, honey or maple syrup, chia seeds or flaxseeds, chocolate chips (if using), dried fruit, vanilla extract, and sea salt.
  2. Stir Well:
    Stir all the ingredients together until well combined. If the mixture is too dry, you can add a bit more honey or maple syrup to achieve a sticky consistency.
  3. Form the Bites:
    Using your hands, roll the mixture into small balls about 1 inch in diameter. You should get around 12-15 bites, depending on the size.
  4. Chill:
    Place the energy bites on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to help them set.
  5. Enjoy:
    Once chilled, enjoy your energy bites as a quick snack or grab-and-go option when you need a boost of energy!

Optional Add-ins:

  • Protein powder (for an extra protein boost)
  • Coconut flakes for added flavor
  • A dash of cinnamon or cocoa powder for extra spice
